3/4cupchopped datesor sugar
1 1/2tspcinnamon
1/4tspnutmeg
1/4tspsalt
1/2cuppecans
1 tbspsalted butter
2 tbspmaple syrup
Instructions
Making the Oatmeal
Place the diced apples, dates and seasonings into a sauce pan on medium heat with the lid on. Allow it to cook for 5 minutes, stirring occasionally.
After the apples are mostly cooked (you'll want to keep some of their texture), mix the oats and milk directly into the pan and cook on low for 5 minutes with the lid on. Stir frequently.
Top with pecans and it's ready to be served (or stored for later in the week)!
Making the Pecans
You can cook the pecans while the oatmeal is cooking to save time!
Place the butter in a frying pan on medium heat and allow it to melt.
Mix the pecans in the butter until they are well coated.
Pour the maple syrup into the pan and mix until the pecans are well toasted.
Continue to stir and cook for the next 3-5 minutes. As soon as you can smell the pecans, they are done. If you cook them longer the natural fats will burn.
