Apple Pie Oatmeal

Warm, generously seasoned apples meet an ultra creamy oatmeal and topped with delectable maple roasted pecans. Easy to make and even easier to eat!

  • 3 cups milk skim, can subsitute with milk alternative
  • 2 cups old fashioned oatmeal sometimes called quick oats
  • 3 gala apples diced
  • 3/4 cup chopped dates or sugar
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup pecans
  • 1 tbsp salted butter
  • 2 tbsp maple syrup


Making the Oatmeal

  • Place the diced apples, dates and seasonings into a sauce pan on medium heat with the lid on. Allow it to cook for 5 minutes, stirring occasionally.
  • After the apples are mostly cooked (you'll want to keep some of their texture), mix the oats and milk directly into the pan and cook on low for 5 minutes with the lid on. Stir frequently.
  • Top with pecans and it's ready to be served (or stored for later in the week)!

Making the Pecans

  • You can cook the pecans while the oatmeal is cooking to save time!
  • Place the butter in a frying pan on medium heat and allow it to melt.
  • Mix the pecans in the butter until they are well coated.
  • Pour the maple syrup into the pan and mix until the pecans are well toasted.
  • Continue to stir and cook for the next 3-5 minutes. As soon as you can smell the pecans, they are done. If you cook them longer the natural fats will burn.
