Goat Cheese Breakfast Skillet

Layers of spinach, egg, mushrooms, goat cheese and whole grain bread make this dish soo flavorful, filling and perfect for breakfast and dinner!

  • 8 oz baby bella mushrooms washed and thinly sliced
  • 3 tbsp bacon grease or salted butter
  • 10 oz baby spinach 1 store bag equivalent
  • 4 eggs
  • 1/3 cup crumbled goat cheese substitute: feta
  • 8 slices whole grain bread toasted, optional
  • salt and pepper to taste


  • Place 3 tbsp of the bacon grease in a skillet on medium heat for 30 seconds. Place the sliced mushrooms in and cook for 5-6 minutes.
  • One at a time, in large handfuls, place the spinach in the skillet and stir until it wilts. Turn heat down to low.
  • In a separate pan, place the remaining bacon grease in a pan on medium heat. Cook the 4 eggs side by side, season with salt and pepper and cover with a lid. Remove the lid from the eggs once they are cooked "over easy".
  • If you are using toast, you can place the spinach egg mixture directly onto the toast and then place the egg on top and sprinkle with goat cheese.
